I have not said much on Peru, I have been asked many times what I thought of Peru, I have always been lax in my advice or concern on the matter, I would remind the reader to make good use of this, as if consulting a good cook. I have lived her for seven years, visited Peru, six year prior about every year. I have gotten sick eating the Peruvian food a dozen times, and in the Andes they consume strong alcohol, and often. I live in Lima, and in Huancayo, which is in the heart of the Andes. Thus, those with weak stomachs will find Peruvian food tasty, and more often than not, spicy, but beware, where you eat, the Peruvian can eat nearly anything and not get sick, Americans can not, and they are just learning hygiene, and can not understand why others, like me cannot endure a little unwashed plate now and then, or over used oil, etcetera. Their corn and cheeses are delicious, as is cuy with the red sauce, and they have many good dishes of food, but take your time in experimentation with them...
